Blueberry GranitaA granita is an Italian shaved ice type of dessert that is refreshing. Unlike sorbet, it maintains the texture of the fruit used. Although traditional recipes use a simple syrup to create, mine allows the full flavor of the blueberries to come through with just an extra hint of sweetness. Serves 1.

Vegan Freedom Energy Bars: (Allergen-free, low-glycemic: Gluten Free, Soy free, Dairy free)
Vegan freedom energy protein bars are what I serve as free samples at races known as "protein poppers."
I named them "freedom" because they are free from the most common food allergens: gluten, nuts, soy, corn, dairy/casein. They are vegan and made with one of my favorite versatile protein powders (shakes, smoothies, baking), Garden of Life Raw Protein©. They were fun to create (have your kids help you, the hand mixing is fun for kids). Some people claim they taste and look like raw cookie dough, others said they were reminiscent of PB&J. They are also low on the glycemic index which makes them a safer alternative for diabetics, and they contain no preservatives, additives, or colorants. Additionally, they're chock full of EFAs (Essential Fatty Acids) and vitamins. I don't however recommend eating more than one to two a day unless you're looking to gain weight. They are good pre- and post- workout. Ingredients: 2 cups Go Raw © sprouted homemade sunflower seeds butter (seed butter recipe below) 1 cup dried organic cherries, unsweetened 17 organic Medjool dates, chopped 2 scoops Garden of Life Raw Protein© powder ½ cup Bob’s Red Mill© organic whole ground organic flaxseed meal 2 TBS room temperature Nature’s Way EFA Gold© Organic pure extra virgin coconut oil Directions: Mix above ingredients with clean hands. Form into bars or balls. Chill for one hour. Store in an airtight container in the refrigerator. Sprouted Sunflower Seeds Butter 2 cups Go Raw © sprouted sunflower seeds Vitamix or other high powered blender/food processor ¼ cup Hain© pure foods Safflower Oil Put sunflower seeds in unit. Drizzle in ¼ cup safflower oil. If using a Vitamix: keep at 1, then quickly turn up to 10 and high. Using tamper, puree into butter for a total of one minute. If using a food processor: place sunflower seeds in processor and run it on high speed until a paste forms, roughly 30 to 45 seconds. Check the consistency of the sunflower seed butter. Leave pieces of seeds for a "chunky" version or blend until completely smooth. Add the safflower oil -- mix for a few seconds to incorporate the oil. Adapted from: How to Make Sunflower Seed Butter.
